MORIUMIUS Farm & Winery is a regenerative wine project located in Ogatsu, Ishinomaki, Miyagi Prefecture, a coastal community surrounded by abundant forests and sea. Established as part of the region’s recovery following the Great East Japan Earthquake, MORIUMIUS is restoring tsunami-affected land through regenerative agriculture, using compost, marine resources, and microorganisms to rebuild healthy soil. While its young estate vineyard develops, the winery produces naturally fermented wines from grapes grown by partner farmers in Yamagata. Each bottle reflects a wider commitment to restoring the land, reconnecting people with nature, and creating a sustainable future for the community of Ogatsu.

Aizawa Nouen is a family-run vineyard and winery located in Memuro, Tokachi, Hokkaido, where grapes are cultivated in a dramatic climate ranging from –30°C winters to summers exceeding 35°C. Beginning with wild mountain grapes planted in 1998, the family created its vineyard from untouched forestland and continues to farm entirely without pesticides or chemical fertilizers. By preserving the surrounding trees, planting thousands more, and encouraging a diverse natural ecosystem, Aizawa Nouen allows nature to support the health of its vines. Since opening its own winery in 2019, it has produced wines that express the distinctive strength, gentleness, and untamed character of Tokachi.
